From My Kitchen: Vermont, Race Cars, and a Flare


Hi Reader,

It's been a minute since I checked in. I hope you'll forgive me because May was a lot. Like, a lot a lot. We packed in a road trip to Vermont, the Indy 500, the last day of school, and some serious garden work—and then my body promptly sent me the bill. I've been in a major chronic illness flare and boyyyy have I spent a lot of time horizontal, which has given me plenty of time to catch up on TV and reread my favorite books. Here's what the last few weeks actually looked like:

Hello, Vermont! I went on a road trip up to Burlington, Vermont this month to see my oldest niece graduate from med school! It was a lot of time in the car, but Burlington was gorgeous, and I was so proud to see the kid I've known since she was a baby become a doctor. She's going to do amazing work!

Must recreate this! At graduation dinner, I had this amazing chicken bacon pasta in a parmesan cream sauce that I cannnnnnnot stop thinking about. I'm going to have to add it to my recipe development docket.

Last day of school. We wrapped up our last day of the school year a few weeks back and celebrated the final day with a picnic at the park and a trip to the science museum. We LOVE our travel charcuterie board (it even has a lid). It's perfect for stuff like this!

From the garden. We're harvesting snap peas, broccoli, lettuce, kale, and some new potatoes from the garden right now. FYI, if you want more garden updates from us, make sure to subscribe to our gardening-only email list—Growfully. You can do that here!

Goodwill find of the century! I gotta tell you about my Goodwill find from a few weeks ago. That's a brand new pair of Teva Mush flip-flops and a brand new pair of Haflinger wool clogs for a total of...$9.98. And both in my size! I was so excited. I kept looking around thinking someone was going to stop me and tell me that they actually aren't for sale. 😂

The greatest spectacle in racing. As my family always does, we hit up the Indy 500 this year. It was one of the greatest races I've ever seen! Unfortunately after a chaotic month, my body was not happy, and I was pretty miserable the second half of the race (thanks, chronic illness). And I've been in a bad flare ever since. My goal for the next few weeks is to take very good care and rest up.

  • 🍳 Recipe on repeat: I cannot stop making this One Pot Creamy Lemon Chicken Pasta.
  • 💭 Something I figured out: when I hurt as much as I have been lately, I rely a lot on magnesium supplements. I take both Natural Calm mixed with tart cherry juice before bed and when I take a bath, I always make sure to mix in magnesium flakes, too. It really does help me!
  • 📖 What I'm reading: splitting my reading time right now between The Things We Cherished by Pam Jenoff (WW2 historical fiction/legal mystery) and When Things Fall Apart by Pema Chödrön (for the 100th time). Whenever I'm feeling down or in pain, Pema really helps me.
  • 📺 What I'm watching: I plowed through Off Campus in like two days while I was horizontal in flare mode. It was the perfect bingeable, low-stakes fluff to watch while I'm deep in recovery.
  • Question for you: when your body is feeling rough, what do you do that gives you comfort?
